Ricotta Herb Rolls


At the start of summer 2023, my husband and I decided to challenge ourselves to not buy any bread, bread products (like naan, pita, bagels, etc.), or baked goods from the grocery store. This challenge was a way for us to be more intentional about ingredients and feel better about our consumptions.

It is now 5 months later, and the challenge has quickly turned in to habit. I have loved learning new recipes to replace all of our store-bought favorites and creating new family recipes that will absolutely become staples in our home.

Starting with these ricotta herb rolls!

These rolls are packed with flavor. They are fluffy, delicious, fragrant, and perfect all on their own or used for sliders or sandwiches.

He worked so hard on these for our family dinner. I love getting the kids involved in the kitchen and am quickly realizing they enjoy it, too.




Here is a photo of them being served as steak and cheese sliders. YUM!

To make these, brown up some shaved steak, onion, mushrooms, and seasonings (we like steak seasoning) and add the beef mixture and cheese of choice (we did pepper jack) to the bottom half of rolls. Broil for 2-3 minutes to melt the cheese and place the top buns back before serving.

We served them with an easy garden salad and there was not a single bite left!

Extra note* These are bread machine friendly! Instead of mixing and proving in a bowl, add ingredients in order listed to your bread machine pan. Select raw dough cycle and let the machine do all the work! Let sit until doubled in size after mixing, or run a ferment cycle on your machine. Take the dough out, roll in to balls, and follow the remaining steps to the recipe as instructed.
